Gluten-free persuasion

Today’s National Gluten-Free Day made me think about the gluten-free cupcakes I’ve met. Here’s my collection for the record.

Knowing National Peanut Butter Fudge Day was coming up, I got this as my second choice when the bakery was out of its conventional peanut butter flavor. It made my visit to Kiss my Cake genuinely educational. My first exposure to tigernut flour yielded a wholly enjoyable cupcake.

I found a lemon coconut of highly respectable quality at Wild Flours Bake Shop.

The last two cupcakes are from my November 2018 field research trip to Long Island. I went to Huntington, N.Y., to investigate the Frenagel and naturally studied local cupcakes, too.
